WHere is an easy interpretation of a drink featured on the seasonal menu. It's a batch prepared mix that's packed full of flavours of a holiday season, rendering it perfect for hosting a celebration. Any leftover cordial for morning drinks, desserts, or for another batch of bikinis.

The Bikini Cocktail

Serves 10 guests

To make the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Instructions

To prepare the Citrus Syrup: Put the listed components in a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Then, turn off the burner allowing it to cool down fully. Pour to a sealable bottle, cap it keeping it chilled, it can be stored for around a month.

For the Batch Mix: Pour all the liquids in a sizeable container, leave to sit for one hour, then pass it through preferably using a fine cloth, to ensure it's completely strained.

When ready to serve: Pour 85ml from the batch mix into a mixing glass containing ice, gently stirring lightly for about 60 seconds to cool it down. Filter into an chilled martini glass or a similar vessel, top with some cranberries adding the final touch with a brief mist of the essential oil over the drink.
